“Buffalo” Wings
A little fun fact for you in case you didn’t know. These wings got their name from the city of Buffalo, New York, where they were first invented.
The traditional recipe requires the wings to be deep-fried and coated in the delicious Buffalo wing sauce. But these baked Buffalo wings are what I prefer.
This recipe is a variation of the traditional one where the wings are baked instead of deep-fried. The prep is also less messy and easier to clean.
Deep-fried vs broiled
Regardless of whether you choose to go for the deep-fried wings or this broiled alternative recipe, the result will be just as delicious! The fried option will offer you crispier wings, but the broiled one will be arguably healthier and faster to cook.
Fresh vs frozen
The intact and fresh chicken wings offer the most delicious result. You can however substitute these with frozen wings. And if they come separated into drumettes and flats, they will make the prep stage go that much faster.
If you’re going for the fresh ones, use a sharp and sturdy knife to cut and separate the wings by cutting at the joint. You can also cut and discard the tips as they will just take unnecessary space and will make no difference to the end product.
Best dips
The usual is blue cheese dressing and celery sticks, but these Buffalo wings will also go great with a ranch dressing or a creamy garlic parmesan dressing.

Ingredients
- For the wings
12 or more chicken wings
4 tablespoons hot pepper sauce
3 tablespoons unsalted butter
1 tablespoon paprika
1/2 teaspoon cayenne pepper
salt and pepper to taste
- For the blue cheese dip
1/2 cup crumbled blue cheese
1/2 cup sour cream
1/2 cup mayonnaise
1 clove minced garlic
1 tablespoon white (wine) vinegar
METHOD
- Prepare your wings:
For the fresh wings, cut off the wingtips and separate them at the joint
For the frozen wings, defrost overnight in the fridge and cut them at the joint if not already separated.
Put the chicken wing pieces in a large bowl and set aside. - Prepare the marinade:
Mix the melted butter, paprika, cayenne pepper, salt, pepper and hot pepper sauce in a large bowl to create the marinade. Take 2 tablespoons and separate them from the main marinade to be used later on. - Marinate your wings:
Add the wings to the marinade bowl and mix them well until well coated and let them marinate at room temp for at least half an hour (can be longer if you wish to make sure the marinade is absorbed well into the wings). - Broil the wings:
Take the wings out of the marinade bowl and place them in a broiler pan. At this point, you can discard the marinade leftover from the wings (but not the initial 2 tablespoons). Broil the wings 4 to 5 inches from the heat for about 10-15 minutes on each side until the chicken is nice and tender and no longer pink. - Prepare the blue cheese dip:
While the wings are cooking, place the blue cheese, sour cream, mayonnaise, garlic and vinegar in a blender and mix until smooth. Once ready you can cover and chill the dip. - Baste the wings with the spare marinade:
Once the wings are cooked, remove them from the oven and pour the 2 tablespoons of spare marinade on top of them to keep them juicy and away from drying. - Dip and enjoy!
